Basic Italian Tomato Sauce

| 1 large | onion diced |
| 2 cloves | garlic, minced |
| 1 can | tomato paste |
| 2 large cans | tomato sauce (preferably made from fresh tomatoes) |
| 1 cup | water |
| ⅓ cup | sugar |
| Salt and pepper to taste |
Cook onion in a small amount of olive oil until golden. Add garlic and sauté 3 minutes more.
Add all the other ingredients. Bring to a simmer and cook very slowly until the sauce is thick and deep red.
Makes about 2 quarts.
